What is Air Roasting?

Most coffee you'll find on supermarket shelves and even in many speciality roasters is drum roasted. In a traditional drum roaster, green coffee beans are tumbled inside a hot metal cylinder. While this method has been used for over a century, it has a fundamental limitation: the beans are in direct contact with a hot metal surface. This contact causes uneven roasting — the outside of the bean can scorch or char while the centre remains underdeveloped.

Air roasting — also called convection roasting — takes a completely different approach. Instead of tumbling beans against hot metal, our roaster suspends the beans on a powerful stream of precisely heated air. The beans float and circulate freely, with every surface exposed to the same consistent temperature. This means each bean is roasted evenly from the inside out, with no contact burning whatsoever.

The result is a cleaner, sweeter cup of coffee. Without the smoky, bitter compounds created by surface charring, you taste the true character of the bean — its origin, its natural sweetness, and the delicate flavour notes that make each coffee unique. Air roasted coffee also stays fresher for longer, because the natural oils remain locked inside the bean rather than being forced to the surface by aggressive heat.
